Easy Greek Orzo Pasta Salad Recipe


I love to meal prep for the work week. Honestly, sometimes lunch is what I look forward to most about my day. 30 minutes of un-interrupted adult conversation.. ha!

I love meal prepping pasta salad because it is so versatile and doesn’t get old by the end of the week! Plus, you don’t have to worry about reheating it.

I have been on an Orzo kick recently, so I used that in this recipe. I like that the pasta doesn’t overwhelm the veggies as much using orzo. I love using my veggie chopper to speed up the process even more! I’ll link it below using my affiliate Amazon link if you think it would make a nice addition to your kitchen!


Greek Orzo Pasta Salad

Ingredients:

  • 1 c orzo or pasta of your choice
  • 3 mini or 1/2 large cucumber, chopped
  • 1 c cherry tomatoes, chopped
  • 1 jar of artichoke hearts, chopped
  • 1 container of feta cheese
  • 1/4 c greek dressing of your choice
  • salt & pepper to taste

Directions:

Boil orzo while you prep and chop your veggies. Once veggies are chopped, add them to a large bowl. When orzo is al dente, strain and rinse with cold water to cool. Add orzo to the bowl, as well as the feta cheese and dressing. Mix well and add salt and pepper to taste.

I like to grill some chicken to put on top to help fill me up longer and for some added protein.
